The MATIAS winery is made from Cabernet Franc pomace. Pomace means pressed, dry grapes, the brandy made from it is called pomace brandy.
Cook it immediately from the fermentation tank, leaving the red wine a little damp in it, so it will have an alcohol content and the distillate will be more fragrant. Delicious, elegant, spicy yet extremely complex product. The sweet opening in the mouth is followed by black chocolate notes, which are made endless by the tannic astringency. It is an excellent aperitif when consumed on its own, a really harmonious brandy with black coffee after a meal.
